Banana (Protein) Pancakes

If you have been following my personal Instagram account (@vika.jagdeo), this morning you probably noticed that I went on a protein pancake-making spree! Taking 6am antibiotics means not being able to fall back asleep and having lots of extra time in the morning for the next week! #bless

Anyways, lots of you reached out for the recipe and the verdict, so I figured this would be a great blog for this week! I tend to meal prep the same meals, week after week, but honestly months of protein smoothies can get really boring (EVEN AFTER TRYING 10 DIFFERENT KINDS)!!

So! Here is what I used for mine this morning. I’ll make little comments on recommended modifications for you in italics!

RECIPE:

2 Scoops of Life Time Vegan Vanilla Protein Powder

30g of protein, 14g of carbs, 5g of fat. I think the vegan chocolate powder or chocolate collagen mix would taste good, too!

2 Bananas

This is to mix into the batter and to top your pancakes (for Instagramming purposes). I would recommend cutting this in half because 1. CARBS 2. It was waaaaaaayyy too sweet for me and I think the bananas definitely added to that. I would also consider adding part almond flour instead to help with the sweetness.

1 Cup of Almond Milk

I use the unsweetened one!

2 Eggs

Yes, I have a tiny little mouse whisk and no, I unfortunately don’t remember where I got it </3

Pure Bourbon Vanilla Extract

Just a splash. I get mine from Trader Joe’s. I’ve found lots of recipes online that call for baking powder, but I didn’t have and the cakes held together really well, so…

Olive Oil Spray

Cook your pancakes on medium and wait for the bubbles to flip!

Strawberries

Again, purely for Instagram purposes. It’s what I had in the fridge. Blueberries, raspberries or blackberries would probably work well, too!

Cocoa Nibs

I merely sprinkled them... BUT… I bet you could add these to your batter for a chocolate-chip feel…

My latest small victory has been using the MyFitnessPal app. Okay okay, I know I’ve been told to by a lot of people (cough Ian) BUT I didn’t realize how easy it is to literally SCAN your food’s barcode. I got my macros calculated (thanks Loman!) and did not realize how quickly carbs can add up and how my diet has been so low on fats. So, that has been pretty cool and has kept me on track for the most part (pre-sinusitis apocalypse). The only downside I have found is having to calculate your own macros for homemade dishes. BUT if you make these often, you can just save the nutrition information in the app, which is pretty cool. 10/10 recommend.

Back to the pancakes! Overall, I really liked them. Definitely too sweet for my liking, but I think a few tweaks would do it well. Let me know if you try them!
